- 1 lb. O'Connell's Corned Beef cooked and diced
- 2 Medium size potatoes cooked and diced
- 1/2 Cup chopped red onions
- 1/2 Teaspoon salt
- 1/2 Teaspoon fresh pepper
- Olive oil
Combine first five ingredients. Drizzle pan with oil. Add has mixture and cook until golden brown. Serve alone or on top with poached eggs as desired.
